Joan's Chocolate Cake

(Never Fails)

Joan Lawrenson was Granny Bess and Papa's neighbor who lived 2 houses down the road in Greenside. We grew up with Jean & Tracey, Joan & Vic's eldest kids.

You can make layers and add a cream or chocolate filling in between the layers.

Ingredients

1 cup Sugar
4 Eggs (separated)
3 tsp Baking Powder
1/2 cup warm water
1/2 cup oil
1 cup Flour
3 tbsp Coca Powder
Pinch of Salt

Line a cake tin with grease proof paper.

Method

Beat egg yolks and sugar together for 10 min.

Add mix of oil and water.

Sieve dry ingredients and add.

Beat egg whites until stiff.

Mix together and fold in beaten egg whites.

Bake in a moderate oven (180°C) for 25 to 30 min.

Icing

Dissolve 2 tbsp Cocoa in 3 tbsp hot water.

Add a walnut-sized knob of butter.

Add sieved icing sugar until a smooth consistency is obtained.

Ice, and decorate with cherries and angelica.
