Hollandaise Sauce

Tony's Hollandaise Sauce

Tony loved to impress people with this quick and easy recipe. It comes out really well and is perfect accompaniment to salmon and other fish dishes.

For those who struggle to read Tony's writing on the left:

4 whole eggs
Juice of 1 lemon
500g Butter
Ground black pepper.

Melt the butter gently without burning (microwave works well).

In a Blender, blend the eggs, lemon juice and pepper on high. Trickle in the melted butter.

Once blended, put the mixture in a bain-marie (double boiler) and stir for 5 to 10 min until thickened.
