Hot Chocolate Sauce

For those who struggle to read Granny Bess's handwriting...

Put in a saucepan:

1 cup Sugar
1/4 cup Cold water
2 tbsp Cocoa dissolved in 1/4 cup hot water & 1/8 tsp Cream of Tartar
Place on stove and stir until sugar is dissolved then boil rapidly for 5 minutes
Remove from heat and add 1/4 tsp vanilla essence
Serve at once


Add 2 tbsp butter and a tsp vanilla essence to make it even better.


Granny Bess would make this and serve over ice-cream. It would go hard and sticky over the cold ice-cream. Its not easy to get perfect the first time - you can over cook it easily (then it turns solid), but with practice, you get the hang of it.
